I don’t really have a dog bucket list but I’m always interested when I see a creative combo of ingredients. I’m a Mess Dog person—chili, kraut, onions, mustard. In fact, it was so hot last night we skipped the bun, sliced the dog, and just piled the mixture in a bowl but with one change I’ll repeat because it was that good. Kimchi instead of kraut. Fabulous!

Ohhhh. Kimchi! Technically it’s the same, just spicier and cut different when you think about it. I have to try that.

I’ve fermented sauerkraut but never kimchi. The restaurant I used to work in the sous chef did several varieties of kimchi one was almost green version that they used oysters in. I love fermentation .

I know you did! Now that I’m thinking about it what are versions of Italian hotdogs I don’t think I’ve ever seen that.

i will have to document the hot dog culture here.. food trucks outside of disco's late night food? I just had a "Dario Dog" at the famous butcher's in chianti and it was delicious.. a large hot dog with carmelized onions!

Beef I’m sure. Onions are key. Another reason I couldn’t do the business… my family couldn’t grasp how to make caramelized onions despite me instructions them over and over.

As I get older, I do like the palette a good, beef dog provides but it has to be a grilled dog.

Definitely grilled. The thought of dirty bins of hot dog water repel me.
